Restaurants are among the most regulated group of retailers in the business, with the federal government in May telling chains with more than 20 units they must post on their menus calorie counts for food and beverages, including alcohol. Chipotle is known for its margaritas, while Taco Bell and Pizza Hut are among those serving at least wine and beer at their locations. McDonald’s doesn’t serve alcohol in this country, though beer is available at McDonald’s units in several other countries.

 

When Starbucks unveiled its upscale Reserve Store earlier this year, the menu included coffee drinks and Princi food items available at its Reserve Roasteries around the country, along with a full bar serving beer, wine, spirits and cocktails.

 

That signals a change in orientation for Starbucks. With the launch of Starbucks Reserve Roastery less than four years ago, the company has begun introducing a collection of specialty small-lot coffees and high-quality Italian snacks and pastry. The Starbucks Reserve Store adds drinks to the equation.

 

Other changes are afoot as well. Starbucks has expanded the availability of its mobile-ordering app, which had been limited to loyalty program members but is now open to all customers. The app’s wider availability was made possible after a solution was devised for the overcrowding in the order pickup area where app users mingled with in-store customers.

 

The company “rethought the entire production methodology,” says Adam Brotman, executive vice president for global operations and partner digital engagement. Eliminating long lines stemmed the loss of business by potential customers who perceived the wait time to be too long.
